“Giving Back Isn’t Just Something We Do—It’s a Responsibility”

The Nichols Family’s Commitment to the “Hub of Activity” at Samaritan House Fort Collins 

Each day at Samaritan House Fort Collins begins in the cafeteria when tables and chairs are set up to provide a welcoming environment for those we serve. Once breakfast ends, guests disperse to work, job interviews or appointments at agencies such as the Social Security office or the Department of Human Services. Children board school buses, carrying with them a sense of normalcy despite their uncertain circumstances. On days of inclement weather, the cafeteria becomes a vital gathering space, providing warmth, safety and community throughout the day. 

Lunchtime sees some guests returning to eat in the cafeteria, while others take sack lunches packed by our team to their workplaces or schools. As afternoon turns to evening, guests reunite in the cafeteria before dinner. This space is more than just a meal hall—it is a hub of activity and support. Some may join knitting or crafting classes, while others participate in Bible studies or spiritual engagement opportunities led by volunteers. Birthday celebrations and holiday gatherings bring moments of joy, reminding guests that they are valued members of a caring community. 

After dinner, the cafeteria transitions once again—this time into a meeting space where guests participate in community discussions, strengthening their relationships and learning how to support one another. Finally, at the close of the day, the room undergoes its final transformation, becoming a sleeping area for 30 women. Mats and cots are arranged where tables once stood, offering a safe place to rest before another day begins. 

The Nichols Family of High Country Beverage, longtime volunteers and supporters of Samaritan House Fort Collins, understand the cafeteria’s importance to our mission, and that’s why they’ve decided to generously sponsor the space. 

Their family’s commitment to giving back is deeply rooted in their values, shaped by the example set by their father, Dave Nichols who believes that businesses should do more than operate in a community—they should actively contribute to making it better. Inspired by this philosophy, the Nichols Family sees their sponsorship as more than just providing meals; they hope to offer a sense of dignity, stability and hope to those facing hardship. They believe that something as simple as a warm meal served with kindness can remind someone that they are not alone. 

The Nichols Family has a deep understanding of food insecurity and the challenges faced by many—including hardworking families, veterans, and individuals navigating unexpected hardships. This awareness has shaped their dedication to supporting initiatives like Samaritan House, as they firmly believe that no one should have to struggle alone. 

They also want to encourage other individuals and businesses to get involved through volunteering, donating, or advocating for long-term solutions like affordable housing and job training programs. They hope their commitment will inspire others to step up and make a difference in the lives of those experiencing homelessness. 

The generosity of the Nichols Family sustains not only meals, but the dignity and well-being of every guest who walks through its doors. They measure success in lives changed—whether that means helping someone find stable housing, secure employment, or simply regain the confidence to take their next step forward.
